Nutty Date Energy Balls

These nutty chocolate date energy balls are the perfect no-bake snack - naturally sweet, quick to make. Ideal for lunchboxes, after-school treats, or an afternoon pick-me-up. I usually reach for one of these post-gym when I want something sweet without the guilt.

Ingredients

  • 50–60g walnuts

  • 100g oat flour or blended oats

  • 250g Medjool dates

  • 2 tbsp peanut butter

  • Pinch of salt

  • 2 tbsp cacao powder (optional)

  • Splash of vanilla extract, honey, or maple syrup

Method

  • Wash/Soak the pitted dates in warm water enough to soften, drain the water then pat dates dry.

  • Add all ingredients to a food processor (blender also works) and blitz until the mixture becomes sticky and well combined. If you’re using rolled oats, blend them with the walnuts first, then add in the wet ingredients.

  • Roll into balls of desired size.

  • Refrigerate for 1–2 hours to firm up.

  • Dip or coat the chilled balls in melted dark chocolate/desiccated coconut (optional).

  • Finish with a light sprinkle of sea salt.

Store in an airtight container and enjoy whenever you need a quick energy boost.
