Cornflake Tart

A cornflake tart is a classic, super easy dessert to make. It’s seriously nostalgic and always satisfies that sweet tooth. A fun bake to get little ones involved - perfect if you’re looking for something to keep them busy over the festive break. 

Make it as a traybake or switch it up into mini tarts - Perfect for sharing…though I wouldn’t blame you if you kept it all to yourself.

Here's a quick and easy recipe on how you can make yours!

1. In a pan, melt:

• 55g unsalted butter

• 120g golden syrup or honey

• 20g light or dark brown sugar

2. Once melted, pour over a bowl of cornflakes and mix until well coated.

3. Blind bake shortcrust pastry (poke holes to stop it rising) - I used pre-rolled because who’s got the time? But if you do, prepare this beforehand of course.

4. Once cooled, spread cherry/raspberry/strawberry jam over the base.

5. Top with the cornflake mix and bake at 180°C for 10–12 mins, until golden.

Let’s be honest, this is best served with hot custard.
